Baked Figs with Cranberry Wensleydale

 

This recipe is a favourite of mine as its really easy to prepare in advance and only takes ten minutes in the oven .Its flavours are wonderful for this time of year, but its magical properties are why I love it so much!

Figs are associated with strength and energy (money and sex too!) so I like to use this recipe on the run up to Yule when I need all the strength and energy I can get!

This is great for a starter or lunch, serve with some simple watercress and crusty bread.

Ingredients

·         8 ripe Figs (charged for strength)

·         2 tbsp of Olive Oil

·         250g Wensleydale & Cranberry Cheese

·         2 tbsp of Cranberry Jelly

·         1 tbsp of Vinegar (red wine or balsamic)

·         Salt & Pepper to season

 

Method

1.      Preheat the oven to 190c/370f/gas mark 5

2.      Trim any tough stem parts from the Figs

3.      Rub each Fig all over with the Olive Oil and make a cross at the top of each Fig roughly an inch deep

4.      In a baking dish mix together the Cranberry Jelly, Vinegar and Olive Oil until combined

5.      Add the Figs to the tray and coat each one in the cranberry dressing, standing them upright on their ends

6.      Now cut the cheese into 8 equal portions

7.      Gently pry the edges of the Figs apart and stuff each fig with a portion of cheese

8.      Season with the salt & pepper

9.      Bake in the oven until the Figs are plump but not burst. Approximately 10 minutes

10.    Serve the Figs warm with the dressing drizzled on-top.
