Lemon Courage Muffins

 

The dandelion petals here can be charged for courage, but try other ingredients too in this muffin mix, poppy seeds, white chocolate and lemon balm all work well. This is a great recipe to experiment with and grow in confidence with your magic and confidence in cooking too! bb mandyxxx

 

Ingredients (makes 12)

 

225g butter softened

200g caster sugar

4 eggs, separated

250g plain flour

2 Tsp baking powder

½ Salt

125ml fresh lemon juice

6 dandelion flowers, petals removed

 

Method

 

Preheat the oven to 190’C/380’F. Line your muffin tin with 12 cases

In a mixing bowl cream the butter and sugar together.

Beat in the egg yolks one at a time

In a separate bowl combine the flour, baking powder and salt.

Add the flour mix to the creamed mixture alternately with the lemon juice.

In another bowl beat the egg whites until stiff. Fold them into the muffin mixture.

Add the dandelion petals and gently stir through.

Spoon the mixture equally between the muffin cases.

Bake in the centre of the oven for 15-20 minutes or until muffins are just firm to the touch and golden.

Place on a wire rack to cool.
