Balmy Lavender Salmon

 

Salmon is becoming more affordable, especially being in season. This dish would work well with any oily fish or even lamb chops. For a really quick tea, use vacuumed smoked mackerel or trout. It would also be great with prawn or vegetable skewers cooked on the barbecue!

Using the Lavender and Lemon Balm makes this a great meal to encourage healing and peace, a friend in need would be very grateful for the magical energies provided by this dish. bb mandyxxx

 

Ingredients:

4 x Salmon Fillets

2 x tbsp Honey

         3 x tbsp Olive Oil

2 x Lavender Flower Heads

2 x tsp Worcester Sauce

1 x tbsp Chopped Lemon Balm

Squeeze of Lemon Juice

100mls White Wine or Fish / Chicken Stock (stock cube is fine)

Salt and Pepper to taste (or use lavender salt)

 

Method:

Season the salmon pieces with salt and pepper(or lavender salt) and place to one side.

Add all the other ingredients into a saucepan and mix over a medium heat. Bring to the boil, then turn down and simmer until reduced by approx. 1 third.

Remove from heat and leave to cool.

When cool, brush the salmon with some of the sauce.

Place the salmon under a hot grill or onto the barbecue.

Baste with the sauce occasionally whilst cooking.

Remove the cooked salmon(approx. 10 mins or when salmon is translucent and starting to flake) and serve with the remaining sauce on the side.

Serve at a barbecue or as a main course with a steamed herby rice.
