Recharging White Energy Bake!

 

Energy is something we could probably all do with a little more of, and the humble potato is one of the best sources. But did you know that it also supplies a primal energy to us, it magically recharges our own magical energy. I suppose it’s not that surprising, potatoes are still used as poppet’s to represent the human energy in materialisation magic! Combined here with the tasty, and underused celeriac it creates a white winter bake, magically tuned to recharge you! bb mandyxxx

 

Ingredients

 

200ml vegetable stock

2 garlic cloves, finely chopped

200ml double cream

1 tbsp olive oil

1 large onion sliced

1 large celeriac

3 medium potatoes

1 tbsp plain flour

1 tbsp chopped fresh flat leaf parsley

 

Method

 

Preheat the oven to 200°C/fan180°C

In a saucepan, bring the vegetable stock to the boil with the crushed garlic then remove from the heat and stir in  the double cream. Set aside to cool.

Heat the olive oil in a pan and gently fry the onion until very soft but not coloured.

Peel and quarter the celeriac, then slice to approximately 3mm in thickness. Repeat with the potatoes.

In a bowl toss the potatoes and celeriac with the plain flour, chopped parsley and some salt and pepper.

Butter a 1.2-litre ovenproof dish and layer up the celeriac, potatoes and the softened onion. Gently pour the cream mixture over the gratin.

Bake for approximately 1 hour, until golden brown and bubbling and the potatoes and celeriac are cooked all the way through.

Serve with a simple grilled piece of meat or fish and some lightly steamed vegetables.
