Mince Pie Cupcakes

 

I am a huge mince pie fan, barely do they seem to hit the shops, normally in September, and I’m munching on my first one of the year! The thing is all that pasty can get a bit much and so I like to make these little cupcakes, all the flavour of a mince pie in a fluffy sweet sponge! Kids seem to prefer these too, and they are a bit addictive so keep this recipe on standby during the Yule season. bb mandyxxx

 

Ingredients

 

175g Self raising Flour

100g light Muscovado sugar

1tsp mixed Spice

175g softened butter

3 eggs

2tbsp milk

1 Tsp vanilla extract

140g mincemeat

 

Method

 

Heat over to 190oC /fan 170C.

Line 12 bun cake tin with cupcake cases.

Place the flour sugar butter spice eggs and milk in a bowl and mix with electric mixer or wooden spoon for approximately 3 minutes or until really light and fluffy.

Spoon the mixture into the cases filling them halfway. Top each half filled case with a tsp of mincemeat.

Cover the mincemeat with another spoonful of the cake mixture and smooth the top.

Bake for 15-18 minutes until golden brown and just firm to the touch.

Serve warm dusted with icing sugar with cream or brandy butter.
