Simmering Solstice Stew

 

Nothing says Yule celebration like a big cauldron of simmering stew! This really simple recipe can be made your own by replacing some of the water with red wine or beer, but keep the simplicity of the dish and serve with chunks of crusty bread for a warming end to your magical gathering! bb mandyxxx

 

Ingredients (serves approximately 10)

 

900g stewing steak

3 tablespoons vegetable oil

4 beef stock cubes, crumbled

1L water

1 teaspoon dried rosemary

1 teaspoon dried parsley

1 tsp mustard

1/2 teaspoon ground black pepper

3 large potatoes, peeled and cubed

4 carrots, cut into 2.5cm pieces

1 large onion, chopped

2 teaspoons corn flour

2 teaspoons cold water

 

Method

 

In a large casserole dish, seal and colour the beef in the oil over medium heat until brown. Dissolve stock cubes in water and pour into pan.

Stir in rosemary, parsley and pepper. Bring to the boil, then reduce heat, cover and simmer 1 hour.

After an hour stir potatoes, carrots, celery and onion into the casserole. Dissolve the corn flour in 2 teaspoons cold water and stir into stew.

Cover and simmer for a further hour.

Serve steaming in bowls with chunky crusty bread!
