Solstice Petal Pancakes

 

Summer Solstice is just made to celebrate, why not make some petal pancakes!!!

Heres how…

whisk together 4oz plain flour(sieved), a pinch of salt, 2 eggs, 7floz milk, and a handful or 2 of edible petals, I like to use dandelions, so sunny and so abundant, rose petals and a few daisy petals!

Melt a knob of butter in a pan and pour off the excess to use for the next pancake…

Pour in a thin layer of the batter into the hot pan and cook for approx 1 min each side until golden…

Repeat with the rest of the batter…

To serve sprinkle with icing sugar and a drizzle of honey, yummy!

Any spare pancakes will freeze beautifully between sheets of greaseproof paper…bb mandyxxx
