Stinging Nettle Pesto

Loved by busy mums and students alike…go careful with the garlic though, it’s potent stuff raw! bb mandyxxx

 

Ingredients

 

Large Handful of Fresh Nettle Tips

Handful of Walnuts

½  Small Clove of Garlic

Squeeze of Lemon

Good Slug of Olive Oil

Salt & Pepper to Taste

 

Method

 

Add all the ingredients to either a pestle and mortar, or a blender and  pound or blend to a smooth paste, adding more olive oil to make a sauce constituency if required.

Season to taste.

Stir into fresh hot pasta, and serve with a sprinkling of cheese if desired.
