Black Bean Burgers
This is a great alternative for a barbque instead of the normal meat burgers…embrace you veggie side! bb mandyxxx
Ingredients (makes 4)
1 tin (400g) black beans drained and rinsed
½ red pepper diced
1 small onion chopped
1 clove garlic crushed
1 egg
1 Tbsp chilli powder
1 Tbsp cumin
1 handful fresh coriander chopped
1 Tsp Tabasco sauce (optional)
2 slices stale bread grated
Method
Empty the beans into a bowl and mash with a fork until you have a rough paste.
Add the chopped pepper, garlic and onion and mix well.
In a separate bowl mix together the egg, chilli powder, cumin, fresh coriander and Tabasco.
Pour the egg mixture into the mashed beans. Stir to combine well.
Mix in the grated bread until the mixture is sticky and holds together.
Divide the mixture into 4 burgers.
Barbeque or grill on a high heat for approximately 15 minutes turning regularly.
Serve in burger buns with fresh salad and relish.
