Sweet Homemade Mincemeat.
This simple to make seasonal recipe is a wonderful one to have up your sleeve, it is great when used straight away but will also keep in the fridge in a sterilised jar for up to 3 months. This recipe doesn’t use suet, but the apples and juice make it plump and soft so you really don’t miss it! bb mandyxxx
Ingredients
125g sultanas
100g dried currants
4 apples – peeled, cored and sliced
1 tablespoon orange zest
5 tablespoons orange juice
125ml apple juice
150g caster sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
Method
Stir together the sultanas, currants, apples, orange zest, orange juice and apple juice in a saucepan. Place the pan over a medium heat and stir occasionally, until apples are softened, this should take around 15-20 minutes.
Once the apples are softened, stir in the sugar, cinnamon and cloves and mix to combine well.
Store in a sterilized jar in the fridge or use immediately
