Hog Pot for the Heart

 

This family recipe uses the abundance of the apple harvest to make a tasty warming dinner, linked with love!

The apple has long been a symbol of love, and combined with the Thyme this could be a great recipe to heal a broken heart! bb mandyxxx

Ingredients

12oz / 350g Gammon Steaks(Cut into strips)

12 oz /350g Apples (Cored and Sliced)

1 Large Leek chopped

2 Carrots diced

Around 1 pint /6ooml/20 floz apple cider or chicken stock

1 heaped tbsp Wholegrain Mustard

2oz  Butter

2 tsp Cornflour

Pepper to taste

 

For The Cobbler

 

6oz /175g Self Raising Flour

1/2 tsp Baking Powder

a Pinch of Salt

1oz Butter

1 tsp Dried or 2 tsp Fresh Thyme (chopped)

Enough cold water to form a soft dough (approx 2-3 tbsp)

1 Egg (beaten for glazing)

 

 Method

 

Melt the butter in a large saucepan.

Add the chopped leek and carrot and sweat for 5 mins until softened.

Add the strips of gammon and cook for a further 5 mins so the gammon starts to colour.

Add the sliced apples, cider/stock and mustard and bring to a simmer.

Reduce the heat and cook for approx 20 mins.

When cooked, thicken with the cornflour slacked with a little water, check for seasoning, salt shouldn’t be needed as the gammon probably contains enough but add a good couple of twists of black pepper.

 

For The Cobbler

 

Preheat the oven to 190′c/375′f/gas 5

Sift the flour and the baking powder into a bowl and add a pinch of salt.

Rub in the butter until the mixture resembles fine breadcrumbs.

Stir in the chopped Thyme and season with salt and pepper.

Add cold water slowly and bring the mix together to achieve a soft dough.

Roll out on a floured surface to a thickness of approx 1 cm/half an inch thick.

With a cutter, cut out approx 12 hearts.

 

Assemble The Dish

 

Spoon the gammon mixture into a casserole dish.

Arrange the cobblers over the top and brush with beaten egg to glaze.

Bake this dish in the oven for approx 25 minutes until the cobbler is risen and golden.

Serve with lots of green vegetables.
