Calming Chamomile Chicken

 

This recipe for roast chicken is a little different as it uses chamomile for its seasoning. I bet most of us have tried chamomile tea as a stress buster so why not have a go at cooking with it too? This no hassle recipe takes only a couple of minutes to prepare so pop it in the oven and put your feet up, feel that stress melting away already???!

 

Ingredients (serves 4-6)

 

1 whole chicken, approximately 2lb in weight

2 Tbsp olive oil

1 clove garlic crushed

Zest of a lemon and the rest cut into half

2 tbsp chamomile flowers chopped or the contents of 2 chamomile tea bags.(charged for peace)

1 tsp paprika

Salt and pepper

 

Method

 

Preheat the oven to 190’C/375’F

Rinse the chicken and dry with paper towel

In a small bowl add the chamomile, paprika, salt and pepper, garlic and lemon zest. Mix well.

Drizzle the chicken with the olive oil and rub the chamomile mix all over the chicken with your hands.

Pop the lemon halves inside the chicken and place in a roasting tray with a cupful of water.

Place the chicken to roast in the centre of the oven uncovered for approx 1 ½ hours until the skin is crispy and the juices run clear.

Remove from the oven, transfer the chicken to a plate and cover and allow to rest.

A nice way to serve this fragrant chicken is sliced on top of a bowl of buttered noodles, drizzled with the juices, a squeeze of lemon juice and some fresh coriander leaves. Any leftover chicken is lovely the next day in sandwiches or with a simple salad. bb mandyxxx
