Zesty Lemon-Balm Blondies
This is a lovely refreshing recipe with a twist on a brownie….. great to share with friends. The Lemon Balm and lemon are wonderful purifiers and so are amazing to be eaten at the turn of the year (solstice) to start the next new phase afresh! bb mandyxxx
Ingredients
125g Butter
200g Chopped White Chocolate
110g Caster Sugar
130g Plain Flour
Zest of a Lemon
Approx. 2tbsp Chopped Lemon-Balm
Method
Preheat oven to 170′c fan/190′c/gas 5
Heat the butter gently in a saucepan over a low heat till melted.
Remove from the heat and add half the chocolate and gently allow to melt.
In a bowl, whisk together the eggs and sugar until thick and pale.
Sieve in the flour and add the melted butter and chocolate mix and fold together until smooth.
To this mix, add the remaining chopped white chocolate, lemon zest and lemon balm
Gently mix to combine.
Pour the mixture into a lined brownie or square tin.
Bake in the middle of the oven for 30-35mins.
They should be lovely and golden in appearance but still soft and squidgy inside.
Leave to cool in the tin, and cut into approx. 16 squares.
