Relashio Risotto
This dish celebrates both the Goddess and the God and the name comes from an Italian word meaning ‘ to release’ so have a go at this recipe to release the Goddess and God in you! bb mandyxxx
Ingredients (serves 2)
1 Tbsp Olive oil
1 small onion finely chopped
I clove garlic finely chopped
200g risotto rice
250mls white wine
500ml hot vegetable or chicken stock
4 plump Asparagus spears blanched and chopped
1 Mozzarella ball torn into pieces
25g butter
75g grated Parmesan
Salt and Pepper
Method
Heat the olive oil in a frying pan over a medium heat and gently fry the onion and garlic until soft but not coloured.
Tip the rice into the frying pan with the onions and fry for one minute, coating the rice with the oil.
Add the wine and simmer with the rice until absorbed.
Slowly add the hot vegetable or chicken stock a ladle at a time, stirring all the time until all the liquid is absorbed.
Add the Asparagus, butter and parmesan to the rice and gently combine, Season well.
Just before serving tuck the pieces of Mozzarella into the hot rice to start melting.
Spoon into warm bowls and serve.
This is definitely a dish to share with the one you love. It requires a lot of stirring as it cooks so take the opportunity to stir in plenty of love, enjoy the release of the Goddess and God in you both!
