Store Cupboard Honeyed Chicken

 

This is probably the recipe that over the years has been made the most in my house…the girls were practically weaned on it and it’s still a huge favourite of us all. Simple, quick and affordable, it’s an amazing recipe that can be pulled out for all occasions and one you will eventually measure by eye and adjust the flavour to perfectly suit you! As so many of the ingredients come from the store cupboard this is a wonderful stand by, and is great for the end of the winter to celebrate spring before the fresh produce starts appearing. bb mandyxxx

 

Ingredients

 

50g Butter

1 onion finely chopped

1 clove of garlic chopped

396g tin of tomatoes

2 Tbsp Worcester sauce

1 Tbsp honey

Salt and Pepper

8 Chicken thighs or drumsticks

 

Method

 

Preheat the oven to 180’C/350’F

Melt the butter in a saucepan and add the rest of the ingredients excluding the chicken and cook everything together for 20 minutes.

Place the chicken thighs or drumsticks in an ovenproof dish and season well.

When the sauce is ready, pour over the chicken and place the dish in the oven to cook for 30-40 minutes or until the chicken is tender and cooked through. (Timing of this is dependent on the size of the chicken)

When ready remove from the oven and serve.

 

Serving suggestions

 

Boiled new potatoes and green vegetable

Garlic roasted potatoes and carrots

Steamed rice or buttered spaghetti

 

You can change this recipe in so many ways; why not try adding some peppers and olives to the sauce and serve over pasta with fresh basil, a herb linked to love. You could make little heart croutons to garnish if you’re feeling particularly romantic. Try using different cuts of chicken or some seafood for a new flavour, or make a veggie option with roasted squashes and spinach…The options are endless!
