Thrice Lemon Mackerel

 

This recipe is a wonderful way of using the essences of lemon to their full use. It is a great dish to prepare for friends on a summers full moon, to help attune you with the energies of the night. Such an affordable recipe for this time of year too as fresh mackerel is now in season, although any fish would work well here! bb mandyxxx

 

Ingredients

 

4 x Fresh Mackerel (scaled and gutted)

8 x Spring onions or 1 x Large Onion sliced

2 x Lemons (1 x sliced, 1 x juiced)

4 x tbsp chopped Lemon Balm

4 x tsp chopped Lemon Thyme

Approx. 3oz Butter

Salt and Pepper to taste

 

Method

 

Preheat the oven to 200′c/180′c fan.

Prepare 4 sheets of greaseproof paper with a small amount of butter spread on each.

Place 2 spring onions or a couple of slices of onion on each piece of paper and top with a mackerel on each.

In each cavity of the mackerel place 2 slices of Lemon, 1 tbsp chopped Lemon Balm and 1 tsp Lemon Thyme.

Squeeze over approx. 1 tbsp of Lemon juice on each Mackerel and season well with salt and pepper.

Finally dot  each fish with butter and parcel up the fish by bringing the greaseproof together at the top and folding it tight to create a airtight pouch.

Place all 4 pouches onto a baking tray, and bake in the centre of the oven for approx. 20-25mins, depending on how big the mackerel is.

When done, place each parcel on a plate and allow your dinner guests to open their own to take full advantage of the aroma when opening.

Serve with simple new potatoes and some fresh green peas or beans.
