Rustic Country Asparagus

 

This surprisingly easy one dish bake would be a starter for 4 people or lunch for 2. Fresh and seasonal asparagus stars here, with a gooey melting goat’s cheese complimenting the lavender… give it a try!

Ingredients

 

1 x Bunch of Fresh Asparagus

1 oz Butter

 A Drizzle of Oil(Sunflower/Olive etc.)

The Juice & Zest of Half a Lemon

2 Sprigs of Lavender

4 oz Goats Cheese

Salt and Pepper to taste

 

Method

 

Preheat the oven to 180′c fan.

Wash and trim the asparagus. Place in an ovenproof dish.

Drizzle with the oil, add the lavender sprigs and lemon zest and squeeze over the lemon juice.

Season with salt and pepper and turn to coat the asparagus.

Dot with butter and cover with foil.Place in the centre of the oven for approx. 20 minutes.

Remove from oven and uncover. Carefully turn the asparagus and top will pieces of goats cheese.

Return to the oven uncovered for 15 mins or until the asparagus is starting to colour and the cheese is melting.

Serve with fresh simple lettuce and a chunk of soda bread for a starter, or with a large mixed salad and new potatoes for main.
