Sneaky Summer Muffins
These are wonderfully simple muffins to make with the children but if your little person isn’t keen on vegetables a great way into fooling them to eat their veggies without them knowing. You could always top the muffins with a little grated cheese and pop back into the oven for the cheese to melt and great cover up! bb mandyxxx
Ingredients (makes 12)
300g plain flour
1 Tsp baking powder
75g grated carrot
75g grated courgette/ zucchini
4 spring onions/scallions chopped
1 Tbsp poppy seeds
300mls soured cream or double cream with a squeeze of lemon juice
100mls milk
1 egg
100g butter
Method
Preheat the oven 200’C/390’F
Line a 12 hole muffin tin with muffin cases
Sift the flour and baking powder into a large bowl.
Add the grated carrot and courgette, chopped spring onions and mix.
In a separate bowl mix together the soured cream, milk, egg, melted butter, poppy seeds and salt and pepper.
Pour into the dry mixture.
Stir to combine but don’t be too fussy about the mixture being too smooth.
Divide the mixture equally between the muffin cases and bake for 25 minutes.
Remove from the oven, allow to cool slightly and serve warm with a little butter if desired.
