Elemental Summer Salad

 

This recipe harnesses the power of all the elements, and so creates a perfectly balanced elemental dish. The missing element is space or ether, which is where your mixing bowl comes in…it’s our modern day cauldron! New potatoes, asparagus and watercress are all in season, so tuck in and enjoy eating the elements! bb mandyxxx

 

Ingredients:

 

Approx. 1lb Cooked New Potatoes (Earth Element)

1x Bunch Steamed Asparagus (Earth & Air Element)

1x Bunch Watercress (Water & Fire Element)

Approx. 50ml Olive Oil

Approx. 25 mls White Wine Vinegar

Salt & Pepper To Taste

 

Method

 

Chop the cooked new potatoes into bite sized pieces.

Chop the cooked asparagus spears to approx. the same size.

In a large bowl, mix the potatoes and asparagus well and season with salt and pepper.

Place the watercress, oil and vinegar into a blender and blitz till smooth.

Pour the watercress dressing onto the potatoes and asparagus and mix well.

Cover and chill. Serve with cold meats or a barbecue, or just on its own with a crisp salad.

This is a wonderfully seasonal dish to share with friends at summer solstice!

 

TOP TIP: 

Any leftovers can be turned into a simple soup! Add to a pan of stock or water, heat through well and then puree till smooth. Stir in some cream and check seasoning. Serve hot or chilled with some crusty bread.

OLD FOLK LORE!

Potatoes are thought to guard against rheumatism, warts and gout! It is said that you shouldn’t crop asparagus after the longest day (summer solstice). This is because the asparagus plant needs time to renew its resources for next year’s crop… so make this recipe your asparagus celebration, then sit back and wait for next year!
