Winter Bowl of Bravery!
I like to make this wonderfully warming and simple dish on those winter evenings before a ‘big’day…you know the ones I mean, we all have them…meetings, parents days, bank managers and the oh so scary job interviews!!!
The mustard here is charged with courage so this is an ideal dish to set you up, or the ones you love, for that tough day when you need an extra boost of bravery!
Even if you never have a ‘scary’ day, give this one a go…it’s comforting and filling in the cold of winter when only a hearty meal will do, plus using the cheapest cut of beef and no onions to chop this may well be the best recipe for no more tears!!! bb mandyxxx
INGREDIENTS (SERVES 4)
Approx 700g rolled Brisket of Beef
2 litres Water
3x Beef stock cubes
1 x heaped teaspoon English Mustard(Charged for courage)
1 x teaspoon Whole Black Peppercorns
1 x heaped teaspoon Brown Sugar
Approx 1 tablespoon corn flour
METHOD
Preheat the oven to 180′c /160′C fan/350′f/gas 4
Place the beef brisket in a large casserole dish with lid.
Make up a stock with the stock cubes.
Then add the mustard, peppercorns and sugar and stir to mix.
Focus your intent for courage into this mustard mix.
Pour this mixture over the beef the casserole dish (no need to add any salt as the stock cubes carry enough)
Cover with the lid and place in the centre of the oven for 2 and half hours to slow cook.
When ready, remove from the oven. Take the meat out of the dish and carve into thick slices.
Place the remaining gravy in the pan on the hob and bring to a simmer.
Whisk in approx 1 tablespoon corn flour slacked with a touch of water.
Serve the beef and gravy in large bowls with roasted potatoes and butternut squash and steamed green vegetables (I like to use brussel sprouts!)
