Baked Peaches in Elderflower Syrup

This is a wonderful recipe for using those ripen at home peaches you can get. It also works beautifully with nectarines, apples or even soft fruit (just adjust the baking time by half for any soft fruit and be prepared for it to be a little squidgy!) bb mandyxxx

Ingredients:

225g Caster Sugar

1 Pint Water

Large Handful of Washed Elderflower Heads

4  Peaches, Cut in Half

Large Sprig of Mint

Method:

Preheat oven 180′c/gas 4

First, in a saucepan, dissolve the sugar in the water and simmer for approx. 5 mins to make a simple sugar syrup.

Add the washed Elderflower heads and leave to infuse for 30 minutes, then remove.

Place a small piece of mint inside each of the halved and stoned peaches, then place cut side down in a roasting tin, and make a few slashes across each one through the skin.

Pour over the Elderflower syrup and bake in the oven for 20-25mins.

Serve warm with ice-cream on a hot summer’s night, or with custard if it’s still raining!

TOP TIP:

The syrup you have made also makes a delicious drink, mixed with water or maybe added to a gin and tonic… go on, experiment!
